I absolutely love roasting my veggies, it makes them super crispy and draws out a delicious natural sweetness from them. This is the first time I experiment with roasting radishes and I must say I really did enjoy their flavor, I hope you do too!
Health Tip: Radishes are packed with loads of vitamin C which helps build up your body’s natural immunity, they are also a low calorie food; about 1/2 a cup of sliced radishes contains only 9 calories, so snack away!

Ingredients:
- 1 bunch of asparagus chopped
- 5 radishes sliced
- 5 cloves of garlic
- olive oil
- 1/2 tbs garlic powder
- salt
- pepper

Directions:
First, preheat your oven to 350 degrees. While your oven is heating up, wash and chop your asparagus into small pieces as shown below. Place the asparagus in a large pot of boiling salt water and simmer for about 5-7 min. or until tender.
While the asparagus is boiling slice your radishes and garlic into thin, even slices and set aside.
Once the asparagus is done, place it in a large bowl with the sliced garlic and season with olive oil, salt, pepper and garlic powder to taste. Toss until completely coated.
Once coated, spread the asparagus and garlic on a large cookie sheet and place in the oven, roast for 10 min.
After 10 min. add the radishes and leave in the oven for an additional 10 min. or until slightly browned.
Remove tray from oven, place in a serving dish, serve immediately and enjoy!
