I had an extremely large bag of cabbage laying around in my fridge so I came up with this delicious, healthy dish that I hope you’ll enjoy. What I really love about this dish is that it’s super simple, quick and easy. If you have shredded cabbage, everything else takes no time at all. Also, please feel free to tweak and alter the recipe to your liking. The most exciting thing to do is to get in the kitchen and play around with what you have. If you’re missing an ingredient from the list, don’t let it stop you–experiment with some other ingredient that you do have!

Ingredients
- 2 Tbs. of coconut or olive oil
- 1 medium onion sliced
- 1 garlic clove chopped
- 1/2 cup of cashews
- 1 Tbs. of fresh grated ginger
- 1 Tsp. ground cumin
- 3 cups or one small head of cabbage sliced
- 1/2 Tsp. turmeric
- 1 Tsp. curry powder
- 1/2 Tsp. garlic powder
- Salt and pepper to taste
Directions
First, heat the olive or coconut oil in a large skillet over medium heat, you can add more or less oil depending on your liking.
Next, add the sliced onion and cook until golden brown, then add garlic and cook for 1 minute or until the garlic just barely turns brown. Try not to overcook the garlic, it will become bitter if cooked for too long.
Next, add the cashews, ginger and cumin and cook for about 2 minutes or until the cashews become a golden brown, I had my cashews already roasted which is always an option.
Finally, add the cabbage, turmeric, curry powder, garlic powder, salt and pepper and cook for about 5 minutes or until the cabbage begins to wilt. If the cabbage drinks up to much of the oil feel free to add a little more.
Remove from heat and enjoy!
